Rallo Focacciaria and Alimentari is set to debut in early 2027, housed within a renovated former gas station in Red Bank, New Jersey. This new venture is being spearheaded by Victor Rallo Jr. and his son, Jake Rallo, who are both seasoned figures in the restaurant industry. The project has been a long time coming, with Victor having expressed interest in the site for roughly 15 years.

The family purchased the dilapidated gas station only in the past year, but Victor has kept an eye on it while managing Birravino, a popular establishment that he opened with his father. Reflecting on the history of the gas station, Jake Rallo noted that his father has always seen potential in the location and wanted to rejuvenate it. “There was, in his mind, a story to be told about the space,” he shared.
Jake explained that cleaning up the property was an important first step. The Rallo family wanted to pay homage to the building’s heritage while envisioning a vibrant future for it. “We kind of just sat with it for a little bit, cleaned up the property because it was a huge eyesore and let the space speak to us,” he said. The family chose not to demolish the existing structure, opting instead for a thoughtful restoration. Early renovations included planting over 400 new plants and refurbishing the external facade, featuring new garage doors and windows.

Despite the significant transformation, Jake mentioned that they have retained elements of the gas station’s essence, with three garage bays remaining intact. The original signage has also been repurposed, with a new logo and a welcoming message for visitors now displayed on the steel beams. Inside, diners can expect updated interiors featuring custom wood paneling and Italian stone, complemented by modern finishes.
Rallo Focacciaria and Alimentari aims to combine the charm of an Italian café with the artisanal quality of a focacciaria. Jake highlighted the concept’s simplicity, drawing inspiration from his father’s travels to Italy, particularly the bustling Milanese cafes that serve everything from pastries in the morning to focaccia sandwiches at lunch. “Given the vision for the restaurant and the limitations of space in the former gas station, the concept is focused on ‘simplicity at its core,’” he remarked.
Victor will concentrate on the savoury aspects of the menu and the overall management of the business, while Jake is taking charge of the restaurant’s pastry programme. His offerings will include fresh croissants, biscotti, cannoli, and bombolone, alongside freshly baked focaccia for the café’s sandwiches. Jake has even sourced Swiss-made ovens to optimise the pastry production, with their delivery timeline largely influencing the final opening date.
The family already boasts an impressive portfolio of restaurants in the area, which includes River Pointe Inn, a French-American bistro, and the long-standing Birravino. Through these experiences, they have cultivated a deep understanding of the local palate and dining preferences. The Rallo family remains excited as they embark on this new chapter, aiming to create a welcoming space that embodies the spirit of their Italian heritage.
Jake anticipates that Rallo Focacciaria and Alimentari will officially open its doors in January 2027, marking a significant milestone in the Rallo family’s ongoing contribution to the New Jersey dining scene. The anticipation builds as they prepare to welcome both locals and visitors to experience the charm of their newly revitalised establishment.
