A couple from Tennessee found themselves spending their 25th wedding anniversary in hospital following a harrowing incident involving their food truck. Tim and Tiffany McPherson of TNT Tacos were severely injured when their vehicle erupted on 4 June, just one day before they were due to celebrate this significant milestone.

According to a GoFundMe campaign initiated by their daughter, Jada Pastrana, the explosion occurred while the couple was preparing for the day’s operations inside the truck. Tiffany recounted the terrifying moment, describing how she was thrown against a wall from the force of the blast, leaving her trapped. In a display of selflessness, Tim rushed back to rescue her instead of fleeing to safety. “He could’ve easily run out but chose to come back and get me and drag me out,” Tiffany said, praising her husband’s swift actions.

The couple sustained severe second- and third-degree burns from the incident and were airlifted to a hospital in Nashville. Tiffany’s daughter expressed overwhelming gratitude, noting, “It is truly a miracle and a blessing they’re both alive.” Updates from the family revealed that despite their injuries, both Tim and Tiffany were conscious and able to communicate, although they would require extended hospitalisation for treatment and recovery.
Images shared on the GoFundMe page depicted Tiffany with bandages that wrapped around her head and arms while lying in a hospital bed, with Tim resting nearby. Their daughter reported that Tiffany underwent surgery and was recovering well, while Tim was scheduled to have his procedure in the near future, with further surgeries expected for both of them.
In a bittersweet twist, the couple’s anniversary celebration was marked with “hospital food,” adding a poignant note to their situation. Tiffany and Tim engaged in physical therapy together, walking the hospital’s hallways as they sought to regain their strength.
As of 12 June, Pastrana provided an update indicating that her father had been released from the hospital, but he remained by Tiffany’s side and intended to stay until she, too, could leave. The family remains hopeful as Tiffany continues to receive treatment.
The community has rallied in support of the McPhersons, with the GoFundMe page raising over £30,000 to help cover their medical expenses. The outpouring of support highlights the strength of community ties in difficult times, as local residents express their desire to assist.
The cause of the tragic explosion is currently thought to be a gas leak from the propane systems used to power the food truck. Local authorities continue to investigate the incident, with the Carroll County Fire Department providing assistance as needed.
The McPhersons’ story serves as a reminder of the risks faced by those in the food service industry, particularly those relying on mobile units. As they face both physical and emotional challenges in their recovery journey, the couple draws strength from one another and the overwhelming support from their community.
