Renowned Chef Grant Achatz Reflects on the ‘Irony’ of Losing His Sense of Taste due to Tongue Cancer

Renowned chef Grant Achatz, known for his innovative culinary creations at Chicago’s Alinea and The Aviary restaurants, recently shared his harrowing journey of battling tongue cancer and the unexpected challenges he faced. In an exclusive interview with PEOPLE Magazine, Chef Achatz recounted the moment he first noticed a small white dot on his tongue over two decades ago. Initially dismissed as stress-related, the dot eventually progressed into a debilitating condition that affected his ability to eat and swallow, leading him to seek medical help.

Despite being in the prime of his career, Achatz received the devastating diagnosis of stage 4 tongue cancer in 2007, with a survival rate of less than 40%. The cancer had spread to his lymph nodes, presenting him with a life-altering decision – undergo a drastic surgical procedure to remove a significant portion of his tongue and lymph nodes or face the grim consequences. The irony of being a chef confronted with losing his ability to taste was not lost on Achatz, adding a poignant layer to his already challenging battle.

Determined to explore alternative treatment options, Achatz connected with a medical team at the University of Chicago who focused on organ preservation. Opting to participate in a clinical trial, he underwent a rigorous regimen of chemotherapy and radiation, hoping to beat the odds stacked against him. However, the treatment came at a steep price – Achatz lost his sense of taste and smell, essential tools of his trade as a chef. Faced with the prospect of being unable to pursue his passion, he grappled with feelings of purposelessness.
In the midst of the uncertainty surrounding his prognosis and the loss of his sensory abilities, Achatz made a conscious decision to persevere. Despite the challenges, he continued to work at his restaurant, drawing strength from his dedication to his craft and the support of his team. A year and a half of living without the ability to taste or smell served as a constant reminder of the formidable journey he had undertaken in his fight against cancer.
After enduring the arduous treatment process, Achatz received the news of being cancer-free a year later, marking a significant milestone in his battle. Gradually, his taste and smell faculties began to return, reigniting his passion for creating culinary delights. Fast forward to the present day, 17 years post-diagnosis, Chef Achatz is collaborating with registered dietitian Abbey Reiser and Johnson & Johnson to launch ‘Tasting Notes,’ an initiative aimed at providing support and guidance to individuals grappling with altered taste perceptions post-cancer treatment.

Encouraging others to seek multiple opinions and explore all available options, he underscores the need for resilience and determination when faced with adversity.
