In a bid to keep pace with changing consumer preferences, McDonald’s is actively experimenting with new menu items targeted at those taking GLP-1 medications. These weight-loss drugs are gaining traction among health-conscious consumers, prompting a strategic shift from the fast-food giant. Wayne Kuhl, the culinary director for McDonald’s U.S. menu and marketing team, shared insights at the recent “Inside the Golden Arches” event held on October 29.

Kuhl highlighted that the brand is focused on developing offerings that align with the needs of GLP-1 consumers. He stated, “Certainly, things that are top of mind for us is the GLP-1 consumer, and what that means to them, and what menu innovation looks like around that.” The culinary team is committed to understanding these changing dynamics to enhance their menu in a way that resonates with an increasingly health-oriented clientele.

As part of the ongoing innovation process, McDonald’s is testing various items, including hand-breaded and grilled chicken products, although Kuhl emphasised that many concepts are still in their infancy. He asserted the importance of remaining connected to customer expectations, stating, “There’s definitely things that are early stages that we’re still learning about, but it’s important for us that throughout that entire process that we stay grounded with our customer.”
The culinary director stressed that the foundation of McDonald’s menu development is consumer-led. He expressed confidence in the brand’s ability to adapt, noting that the best ideas can emerge from anywhere. “We’re always up to speed on trends,” he remarked, underlining how pertinent market strategies inform product launches.
McDonald’s also embraces nostalgia through its classic items, such as the McRib, which recently made a limited-time return in select locations. Kuhl pointed out the brand’s effort to preserve the signature taste of these beloved products when they reappear on the menu. He acknowledged that restoring classics requires significant effort but offers the advantage of familiarity, which resonates well with customers.
During the “Inside the Golden Arches” event, Kuhl collaborated with Tristen Epps-Long, the winner of Top Chef season 22, to demonstrate how staple items like the Egg McMuffin and Chicken McNuggets are prepared. Kuhl highlighted the simplicity of the Egg McMuffin, made with fresh-cracked eggs cooked in egg rings, which produces a reliable flavour profile. He emphasised the value of strong relationships with suppliers in ensuring consistent ingredient quality, citing examples such as the Canadian bacon sourced from Lopez Foods in Oklahoma and the English muffins from New Horizons Bakery in Ohio, a partnership that has flourished for over three decades.
The Chicken McNuggets were also showcased as being made from 100% all-white meat, coated in a seasoned tempura batter, which, according to Kuhl, sets them apart as a unique offering in the fast-food landscape. “There’s no other QSR brand that does it tempura style within the US, and it creates such a unique experience for our consumers that they can consistently rely on,” he remarked.
Epps-Long shared his nostalgic connection to McNuggets, reflecting on their versatility, stating, “You can pick the shape you want, you can pick the sauce you want, you can match it to what you want.” His insights underscored the emotional ties customers have to these classic offerings.
Delving into the art of food design, Kuhl explained the meticulous thought that goes into crafting menu items. He elaborated on the Quarter Pounder with Cheese, detailing how the sensory experience begins with the aroma of toasted bread and sesame seeds, followed by the zest of condiments that stimulate the palate. “That helps coat your tongue, and what it does is it gives your taste receptors a way to carry that flavour and make it last,” he said, adding that the combination of ingredients results in a fulfilling culinary experience.
Kuhl also discussed the intricacies behind McDonald’s renowned fries, from sourcing to preparation techniques, noting that the chain serves a staggering 3.6 billion servings each year. He mentioned that restaurants receive fresh deliveries of produce, dairy, and beef multiple times a week, reinforcing the commitment to quality.
Concluding his remarks, Kuhl emphasized the significance of “sensory attributes” in product design and the aim to streamline the operational processes for employees, ensuring that creating these beloved items remains as efficient as possible.
As McDonald’s navigates the complexities of modern consumer demands, its recent initiatives are a reflection of an evolving landscape in the fast-food industry, prioritising health-conscious options while staying true to its iconic roots.
