A family in East Longmeadow, Massachusetts, is on the verge of realising a long-held aspiration – to bring the rich flavours of Vietnam to the local community. After 25 years in the United States, Tony and Van Nguyen are set to launch Tony Pho, a restaurant dedicated to Vietnamese cuisine, in the coming months.
The couple emigrated from Vietnam at the turn of the millennium, carrying with them a dream deeply rooted in their culture. Their son, Dan Nguyen, now a third-year medical student at Tufts University, is actively assisting his parents in their venture, balancing his studies with a passion for promoting the restaurant’s vision.

“It has always been my Dad’s dream to share a piece of Vietnamese culture through food,” Dan explained. Strikingly, the ambition to establish a restaurant remained unrealised for years due to various challenges, particularly as immigrants facing barriers and financial constraints. However, after his father completed his degree and gained experience working in the food industry during college, the opportunity to fulfil this dream was finally within reach earlier this year.
Tony Nguyen will take on the role of head chef at the restaurant, while Van Le, who operates a nearby hair salon, plans to contribute her culinary skills with special weekend dishes. Meanwhile, Dan has taken the reins of communications for Tony Pho, managing everything from social media to public relations.
There has been some curiosity about Dan’s commitment to the family business amid his demanding medical studies. “Many people wonder why I choose to engage deeply in this venture when I am so close to achieving my own professional aspirations,” he remarked. “But it feels natural for me to express my gratitude by helping my parents achieve their dream.”
Dan’s involvement runs deeper than mere support; he is also crafting a curated drinks menu that features traditional Vietnamese beverages such as coffee and matcha. The menu itself showcases a variety of authentic Vietnamese dishes, with an emphasis on what real Vietnamese families enjoy during their meals.
“My father has perfected many traditional recipes over the years,” Dan reflected, sharing his personal connection to the dishes by noting how they formed the backbone of his childhood meals. He considers the restaurant’s offerings to be not only a venture into gastronomy but also a homage to his upbringing. According to their website, the menu will include iconic dishes ranging from bánh mì sandwiches to assorted soups and egg noodles, highlighting the diversity of Vietnamese cuisine.
Of particular pride to the family is the pho, a traditional Vietnamese soup renowned for its depth of flavour. Dan passionately asserts that no other establishment has managed to replicate the quality of his father’s pho, attributing its uniqueness to the care put into ingredient selection and noodle preparation.
In the midst of renovations and interior design, Dan described the restaurant’s envisaged atmosphere as a recreation of Vietnam’s vibrant street food scene. He emphasised that Tony Pho aims to encapsulate the essence of dining in Saigon. “We want our customers to feel like they are sitting on a street corner in Ho Chi Minh City, enjoying hearty meals together while listening to Vietnamese music,” he said.
Interestingly, despite the local community’s limited exposure to Vietnamese cuisine, the Nguyen family has taken it upon themselves to share samples through Van’s salon, fostering a familiarity with the flavours of Vietnam. As Dan noted, “Pho has become the new chicken noodle soup for many in the area.”
Tony Pho is envisioned not just as a restaurant, but as a cultural bridge. The family hopes it will bring a taste of Vietnam to those who have never visited, while simultaneously offering a sense of home to those in the Vietnamese diaspora. With this venture, the Nguyens aim to celebrate their heritage and introduce their community to the comfort and joy of authentic Vietnamese dining.
