As the National Football League kicks off its season, Minnesota Vikings wide receiver Justin Jefferson has taken a moment to reflect on his journey, food preferences, and the excitement of football in an exclusive interview with PEOPLE. Jefferson, who hails from Louisiana, expresses a deep affection for seafood, particularly his father’s signature crawfish étouffée, which he considers a cherished post-game meal.

The 27-year-old athlete describes how his father’s culinary skills shine through in the preparation of this beloved dish, which features rich crawfish tails enveloped in a buttery, flavourful gravy served atop rice. “I love my seafood,” he asserts, emphasising the importance of food in his life and career. “Crawfish étouffée is the big, big meal that my Pops loves to cook for me after a big game.” Jefferson’s passion for seafood extends to other varieties as well, including shrimp and lobster.

When it comes to pre-game meals, however, Jefferson adopts a more minimalist approach. “To be honest, I don’t even really love to eat before a game,” he admits, preferring instead to keep his stomach light. An early afternoon match might see him consume just a simple peanut butter and jelly sandwich. Jefferson acknowledges that while he is often on the move, he has a sweet tooth, with snacks like ice cream, cookies, and brownies occasionally making an appearance in his diet. “I can pretty much eat what I want. I run so many miles every single day at practice, so I just burn it off,” he explains.
Reflecting on his personal connection to Pepsi, Jefferson reveals that his father’s affinity for the beverage has long been a part of his life. “He definitely had multiple Pepsis that he always drinks… as soon as I’d get in the car, I’d pick up the Pepsi and just chug it,” he recalls. This nostalgia ties in neatly with his involvement in Pepsi’s latest campaign, themed around tailgating, which features Pro Football Hall of Famer Jerome Bettis as the “official referee of gameday flavour.” Jefferson expresses deep admiration for Bettis, noting, “It’s just an honour to be with him… that’s definitely somewhere I would like to be one of these days” as he aspires for his own Hall of Fame recognition.
Since joining the NFL in 2020, Jefferson’s career has undergone a significant transformation, allowing him to adapt and excel in a competitive environment. He remembers his rookie season, which coincided with the uncertainties of the COVID-19 pandemic, as a challenging yet crucial chapter. “I came in during a COVID year… not really having a true off season,” he reflects. Despite those hurdles, 2025 saw Jefferson setting a record as the youngest player to achieve 8,000 receiving yards. “To start off my career how I did, and to get the record for the receiving yards… was so, so big time for me,” he notes proudly.
The Vikings, having faced disappointment by missing the playoffs last season, are pivoting their strategies for the ongoing season. Jefferson’s outlook is positive; he assures fans that the team possesses a “different grind” this year, expressing confidence that they will surprise many with their performances. “Last year is definitely not something that we wanted to happen, definitely not acceptable,” he asserts, hinting at a renewed focus and determination amongst players.
Beyond the field, Jefferson finds ways to unwind after intense games. He enjoys playing video games such as EA Sports College Football 27 and Madden NFL, allowing him to escape the pressures of his sporting obligations. “It’s kind of escaping reality… hours of just time to myself and really just mentally decompress everything,” he illustrates, highlighting the importance of mental health and downtime in a high-stress profession.
As the NFL season treats fans to thrilling matchups and unforgettable moments, supporters can engage with Pepsi’s promotional offerings, including exclusive deals on their products during the kickoff weekend. With Jefferson’s charisma, dedication, and connection to his roots, he stands as an inspiring figure both on and off the gridiron.
