Alpha Roost Farms in Danville, Kentucky, is turning heads with its innovative approach to addressing dietary restrictions caused by food allergies. Co-founded by WD King and Brent Williams, the farm aims to offer a viable alternative to red meat while also preserving local farmland. This endeavour was sparked by Williams’s diagnosis of Alpha-gal syndrome, a tick-borne allergy that renders individuals sensitive to red meat.
The bond between King and Williams was forged through their shared interests in agriculture; King operated a cattle farm, while Williams worked at a local feed mill that supplied King’s livestock. They decided to collaborate in 2022 when King, following a layoff from his role in poultry nutrition research, playfully suggested raising ostriches as a new venture. Williams, who had a keen interest in nutrition and had previously dabbled with ostrich meat, was quick to join the project.

Eight months after their initial conversation, the duo purchased their first ostriches, marking the beginning of Alpha Roost Farms. The farm, which will soon be home to around 700 birds, has already garnered attention for its unique offering. It seeks to fill a niche market by providing a lean meat source for those who are unable to consume traditional red meat.
Alpha-gal syndrome, which affects an estimated 450,000 individuals in the United States, can cause adverse reactions in those exposed to red meat and its by-products. Symptoms such as hives, digestive issues, and, in severe cases, hospitalisation, can arise from even minor exposure. This made the journey toward establishing a farm dedicated to ostriches deeply personal for Williams. He experiences significant challenges when dining out due to the risk of accidental exposure to meat fumes, as he is not anaphylactic but is nonetheless highly sensitive to the alpha-gal molecule present in red meat.
As the pair embarked on this farming venture, they were joined by their wives—Morgan Hayes, an agricultural engineer, and Kandice Williams, who coordinates the Food Systems Innovation Center at the University of Kentucky. Together, they have crafted a farming model that prioritises both animal welfare and sustainability. At Alpha Roost Farms, the ostriches are raised on expansive Kentucky pastures and provided with careful, nutrition-focused diets.
So why opt for ostrich meat as a red meat replacement? According to the farm’s website, ostrich offers a flavour profile similar to steak while being significantly leaner and packed with protein. “I’m a beef guy by birth,” King admits, “but if cost were not a concern, I would likely choose ostrich more often.” He encourages anyone hesitant about trying ostrich to take the plunge. “It’s high protein, high iron—don’t be afraid to give it a go.”
The farm is currently focused on maintaining a consistent supply of ostrich meat, which has become increasingly popular in the wake of media coverage. King has received requests from as far away as Ontario, Canada, underscoring the potential growth of the market. Their sales primarily target local retailers, emphasising the importance of community involvement and maintaining a family-oriented atmosphere.
With plans to expand their inventory, the founders have set ambitious targets. Currently, they have around 400 birds, including chicks and adult ostriches, and anticipate doubling that number in the next few years. King sees this venture as a means to ensure the sustainability of farming in the region, particularly with skyrocketing farmland prices making traditional cattle farming increasingly difficult.
As Alpha Roost Farms looks to the future, King has additional plans to introduce more products suitable for individuals with Alpha-gal syndrome. However, he clarified that their focus will remain solely on ostriches, steering clear of venturing into the emu market.
In summary, Alpha Roost Farms stands at the intersection of agriculture and healthcare by providing a nutritious meat alternative while aiding local farming sustainability. As King and Williams forge ahead, they not only address a personal challenge but also position themselves as pioneers in an emerging niche within the food industry. The unique story of Alpha Roost Farms serves as a testament to the power of innovation and adaptability in the face of adversity, providing hope for those navigating food allergies while fostering a connection to the land.
