Courtney Cook Bales, a teacher and popular TikTok creator, has garnered attention for her unconventional culinary combinations, captivating audiences with her innovative approach to cooking. Recently, she shared a particularly unique recipe that has become a personal favourite, but which she had never before disclosed to her online followers.


In a conversation with PEOPLE, Bales discussed a surprising addition she makes to her Japanese curry—peanut butter. “It’s a packaged curry sauce, which essentially just requires water and vegetables,” she explained. “I like to add a spoonful of peanut butter to it, turning it into a type of dip to enjoy with Ritz or saltine crackers.” Although it may sound unusual, Bales believes this combination offers a delightful balance of sweet and salty flavours, enhanced by the heat of the curry.
Having lived in Japan during two of her pregnancies, Bales developed a fondness for Japanese curry, which became a staple in her diet. “One day I just decided to experiment and added peanut butter, accompanied by crackers. I was surprised at how much I enjoyed it, and it quickly became a staple for me,” she recounted. Though her children have not fully embraced her quirky twist, they share her enthusiasm for traditional Japanese curry.
Bales, who is a mother of four, mentioned that her children actively participate in meal preparations. “I involve my kids in cooking; each meal is an opportunity for them to engage in the kitchen,” she said. She did note that while two of her children can be somewhat selective eaters, the other two are more adventurous and willing to experiment alongside her. “Unless I prepare something specifically tailored, we all eat the same meals together,” she added.
Among her creations, her children particularly adore a dish that went viral last November—sweet potatoes stuffed with Butterkäse cheese. “We bake the sweet potatoes until they become syrupy and then stuff them with cheese before digging in,” Bales described. “It has become our go-to snack, especially during busy afternoons filled with extracurricular activities.”
Since her initial foray into sharing school lunches on TikTok, Bales has amassed an impressive following of 3.2 million users. She shared insight into her creative process, explaining, “I often whip up recipes based on what sounds appetising in the moment. I tend to be disorganised, so I buy groceries driven by cravings and adapt whatever I have in my refrigerator.” This spontaneous approach has led her to create some unusual culinary pairings, such as dumpling pasta and peanut butter and jelly dip with Doritos.
One of her latest collaborations involves an innovative twist on nachos, incorporating cucumbers and Dill Pickle cheese from The Laughing Cow. Bales explained how she conceptualised this dish: “I wanted to complement the freshness of cucumbers with the new Dill Pickle cheese they released. The nachos are a creative take, with a sauce made from the cheese, pickle juice, chopped dill pickles, green onions, and garlic powder, all topped with crushed salt and vinegar crisps.” She encouraged viewers to try drizzling honey on the “nachos” for an added sweet pickled taste.
Bales films her cooking videos almost daily, often in casual attire, even late at night when she feels inspired to share her latest creation. “Sometimes I’m in my house robe and have just taken my makeup off, but if I’ve made something interesting, I feel compelled to share it regardless of my look,” she remarked, revealing that her filming process can vary from planned segments to spontaneous moments.
As for the rapid growth of her online presence, Bales expressed gratitude for the opportunities it has opened up in her life. Reflecting on her transition from routine house chores to exciting travels, she remarked, “Just 36 hours ago, I was scrubbing my kitchen, and now I find myself enjoying a trip to Chicago. It’s been a whirlwind experience.”
In discussing her culinary aspirations, Bales revealed that working with renowned chef Ina Garten would be a dream come true. Her admiration for Garten runs deep, as she described the Food Network star as “unapologetically fabulous.” “I would probably be starstruck if I ever got the chance to meet her,” Bales added with a hint of excitement.
