After her marriage ended in 2024, Laura found herself grappling with a mix of emotions and uncertainty. The moment of realisation felt crushing for Laura. “It’s more than your heart sinking. It’s really just your world crashing down,” she later reflected on that time. With a final attempt to reconnect, the couple cooked one last recipe together, but that did not provide the closure she had been hoping for.
Instead of letting the weight of her grief prevent her from moving forward, Laura decided to tackle the cookbook alone. At first, this was a daunting prospect; she even experienced a temporary loss of appetite as the emotional toll of her separation set in. “It was such a new experience for me,” she shared. Nevertheless, she pushed through and began to rediscover her passion for cooking while embracing the challenge of each new recipe.
With each dish she prepared, Laura began nourishing not only her body but also her spirit. The act of cooking became a source of excitement for her once again. “It gets me outside of my comfort zone, cooking with these new ingredients,” she expressed. Additionally, Laura started inviting friends and family to join her in the kitchen, fostering a sense of community that was integral to her healing process.
To document her journey, she created an Instagram account titled @bittertobetterchallenge. Through this platform, Laura shared her progress, the challenges she faced, and the joys she discovered. Rather than dwelling on the past and what could have been, she focused on excelling in the present.
Despite the loss of the original dream of a dinner for two, Laura made a new commitment to herself to save the $20 for each recipe she completed. While she acknowledged that using those funds for a solo meal in Paris would not hold the same joy, Laura decided to use the money differently. “I’m very extroverted,” she admitted. Rather than dining alone, she envisioned using the funds to host a gathering that would celebrate those who had supported her throughout this journey.
Cooking with family and friends brought a renewed lightness to Laura’s experience. The support from her loved ones meant the world to her. Laughing over meals that turned out less than perfect only added to the warmth of the experience. “It’s been really touching,” she said, appreciating those who took time from their busy lives to join her in this challenge.
Now, as she works her way through the remaining recipes, Laura acknowledges that scheduling can be a challenge. Her determination, however, remains steadfast. She is committed to completing the cookbook in a timely manner, stating, “I do feel like part of my healing will come—maybe it’s delusional—but I’ll have some sense of closure when the cookbook is done.”
