Nestled in Pensacola, Florida, McGuire’s Irish Pub has been a beloved establishment since its inception in 1977. Renowned for its vibrant atmosphere and strong family ties, this pub stands out not only for its diverse menu but also for its unique traditions that continue to draw in both locals and visitors.

One of the most striking features of McGuire’s is its walls and ceilings adorned with dollar bills, a tradition that began with the owner Martin McGuire’s wife, Molly. After receiving her first tip, she playfully decided to commemorate the moment by pinning it to the wall. This simple act soon evolved into a cherished custom, with patrons following suit, contributing to what is now an impressive display of over two million dollars. “If we ever closed down, at least I’ve got my first dollar,” Molly’s light-hearted sentiment transformed into a good luck charm, encouraging first-time visitors to join in by marking their names and dates on a dollar bill, which they then affix to the walls.
According to Luke Pushard, the bar manager at McGuire’s Pensacola location, the restaurant has developed a clever method for estimating the total number of bills suspended in the air. By measuring the surface area and multiplying it by the size of the establishment, they approximate the staggering figure of bills that has become a signature of the pub.
Among the eclectic offerings at McGuire’s is a uniquely priced culinary staple, the Senate bean soup, which is served for a mere 18 pence. This dish draws inspiration from the U.S. Senate cafeteria; however, unlike its governmental counterpart, which has seen its price rise over the years, McGuire’s has maintained its original pricing. Pushard explains that any patron who orders a main course is entitled to this affordable option. “It’s a bit of a running joke that if you order it solo, it’s $18, but we never charge anyone that,” he said, adding to the pub’s whimsical charm.
Additionally, the establishment is known for its signature drink, the Irish Wake, served in a hefty mason jar. This refreshing concoction comprises gold rum, blue Curaçao, and freshly squeezed orange juice. Patrons are allowed to take their jar home, creating a memorable keepsake from their dining experience.
McGuire’s menu also boasts an array of impressive dishes, including six-egg omelettes, Reuben egg rolls, and USDA Certified prime steaks. Beyond food, the pub is home to an expansive wine cellar and a craft brewery, noted as the first of its kind in Florida. These features speak to a commitment to quality that the pub prides itself on.
Central to McGuire’s success is its family-run approach. Owner McGuire Martin retains the reins over daily operations, prioritising the well-being of his employees. This philosophy establishes a strong bond between staff and management, contributing to a high level of loyalty among the workforce. “He makes all the decisions,” said Pushard. “That’s what has made him so successful over the years. You’ve got a lot of loyal people that work here, many of whom have been part of the McGuire’s family for a long time.”
The pub’s scale is impressive as well, with the Pensacola location accommodating up to 615 guests, supported by an extensive team of over 125 servers, 15 bartenders, and 40 kitchen staff. Pushard emphasised the dedication these employees have to delivering exceptional service, adhering to the pub’s motto: “If you’re not proud of it, don’t serve it.” This ethos ensures that customers receive the best possible experience each time they visit.
In conclusion, McGuire’s Irish Pub is not just a dining destination; it embodies a spirited tradition that has thrived for decades. With its charming decor, affordable menu items, and a strong focus on family values, it remains a quintessential part of Florida’s culinary scene, a testament to the power of community and loyalty in the restaurant industry.
