Lovato, now 33, candidly recalled her past struggles, revealing that grocery stores once overwhelmed her to the point of tears. “I used to step foot into a grocery store and break down into tears because I was so overwhelmed by all of the food,” she shared, highlighting the challenges she faced during her battle with bulimia. Recently, however, she has turned a significant corner: “Now I’m not only going into grocery stores and shopping myself, but I’m also cooking the meals that I’m making, and that’s a huge win for me,” she said with palpable pride.

The plans for her cookbook arose out of Lovato’s desire to create a resource that would help others facing similar challenges. In an exclusive interview with PEOPLE, she revealed that “One Plate at a Time” will feature over 80 recipes, including comforting dishes like spaghetti bolognese, Chicken Milanese with arugula salad, and “Foolproof Pulled Pork.” Lovato’s aim is to ensure that the book remains accessible to anyone feeling apprehensive about cooking or who may have previously experienced disordered eating.

Reflecting on her culinary journey, Lovato recounted a pivotal moment in her recovery when she began to change her perception of cooking. It was during a gathering with friends, when she first made spaghetti squash. “We turned it into this spaghetti squash salad. That was the first recipe that I cooked with friends where I was like, ‘Wow, this is actually really fun,’” she recalled. This experience marked an important shift, allowing her to embrace cooking as a joyful and rewarding activity.
As she continued to explore her love for the kitchen, Lovato formulated the concept for her cookbook. “I wanted to create a cookbook that was for people who may have had disordered eating in the past or are just intimidated to step foot into the kitchen for the first time,” she explained. Her intention is to foster a positive environment for cooking where individuals can grow comfortable and confident over time. “It’s just about getting in the kitchen and getting comfortable around cooking, and that will set you up for success later down the road with more recipes,” she noted.
Lovato has expressed how the act of cooking has been therapeutic for her, providing a pathway to healing her relationship with food. In a heartfelt message shared on Instagram when announcing her cookbook, she described how learning to cook had helped her reconnect with herself. “This book is filled with simple, comforting recipes that have allowed me to reconnect with myself and find both freedom and joy in my kitchen – feelings I never thought I could experience,” she said.
Her hope is that “One Plate at a Time” will not only serve as a collection of recipes but also inspire others to view cooking as an act of love. Lovato remarked, “It has allowed me to see cooking as an act of love and kindness to myself and those in my life, and I hope this book can bring that same feeling into your home too.”
As Demi Lovato prepares to launch her debut cookbook, she stands as a powerful voice for individuals navigating the complexities of food and self-acceptance. Her journey serves as an inspiration, reminding everyone that healing is possible and that joy can be rediscovered in places once thought confined by pain. As she moves forward, her heartfelt commitment to helping others by sharing her culinary experiences is profoundly evident, making “One Plate at a Time” a highly anticipated release this coming March.
